5.2 (b) RELATING TO CHARBROILERS INSTALLED AFTER APRIL 25, 1983, �

RECITALS
'� 1. Whereas the Board of County Commissioners desires to �
�:;; simplify the language it adopted in the past to regulate
x';� the use of restaurant grills (Ord. #18) and to satisfy � �,
, 3<'• a request by the EPA; �

2. Whereas the Board of County Commissioners desires to '
�%� authorize the Environmental Health Department an
'<� additional option (concerning establishments who comply
:�;� with the ordinance by charbroiling low-fat meat) of y :
.,:':� allowing staff to review test data provided by the ;�
;�`� establishment regarding the fat content in meat. �

:r1 NOW THEREFORE BE IT ORDAINED by the Board of County � .
��y Commissioners of Pitkin County, Colorado that Ordinance #18,
? Section 4, Article 4-5.2 (b) Restaurant Gri11s is here by amended ,

•» Charbroilers installed in a food service establishment after April I
a= 25, 1983, but before January 1, 1993, shall not be used to cook ��
� high-fat-content meat unless an emission control device that E
���,y reduces uncontrolled PM�p emissions by at least ninety percent F

(90%) , according to manufacturer specified removal efficiencies, �,
--- is installed and thereafter operated in . accordance ��ith t�
'r�,;, manufacturer's suggested quidelines or instructions. Owners and k�
'�' operators of food service establishments subject to the provisions
of this subsection (b) who claim to serve meat that is not high- `
�\ � fat-content shall allow the Department to enter upon the �
' €: establishment at all times reasonable for the purpose of obtaining
� a sample of ineats prepared on the charbroiler or to review and ' .
_ � evaluate test data maintained by the establishment illustrating the �-�.
fat-content levels of the meat prepared in such establishment. ?'
