Dear Tony,
After a review of the file and a site visit conducted by Nancy MacKenzie and myself on
March 10, 2003 to assess current water use on the property, the Environmental Health
Department has reached the following conclusions:
The engineer designed the system in May 1995 to accommodate a flow of 2537 gallons.
An evaluation of current use on the system includes:
• 2 bedroom apartment = 300 gal
• 2 service station toilets and 4 employees in the station = 500 gal
• 1 liquor store with approximately 400 sq ft = 40 gal
• 18 seats in a restaurant with paper service (25gal/seat/day) = 450 gal
TOTAL = 1290 x 1.75 peaking factor = 2257 gallons

A grease trap was included in the engineer design and was noted on the final inspection,
but you have stated this tank was never installed. A grease trap with a minimum 300
gallons (larger tank capacity would decrease the frequency of necessary service) must
be used if the restaurant wishes to prepare any food that generates grease, for
example, grilling or frying. A ventilation hood would also have to be installed.
