Smith 0119 Redstone Blvd. Carbondale, Colorado 81623 Re: Icehouse Cafe Dear Mr. and Mrs. Smith: This department has completed a review of the 'proposed plans and specifications for the referenced facility in order to determine compliance with Rules and Regulations Governing the Sanitation of Food Service Establishments in the State of Colorado (effective 1 July 1978). We have also completed a visitation to the facility to further evaluate the existing conditions. In light of the. information submitted, we have determined that these plans substantially conform to the established health department requirements. However, the following points need written clarification or`'£urther modification in order to meet the regulatory standards: 1) operable windows are required to be screened during seasons when insects are present. 2) This department must approve the fabrication design of the front service counter when it is constructed. Please consider this letter as a written approval of the plans and specifications for the referenced food service estab- lishment, pending resolution and written approval from this department of the above points. Any furtfier changes .will also require approval in writing. We remind you that a pre-opening and licensing inspection is necessary 'prior to beginning operation.
